As Super Bowl Sunday starts approaching, everyone is looking forward to the showdown between the Kansas City Chiefs and the Philadelphia Eagles, the iconic halftime show, the famous commercials, or the most important part, the delicious game day food. Whether you are hosting a party yourself, or want to bring a dish to elevate your evening, here are super easy game day dishes to enhance your Super Bowl Sunday.
1. BUFFALO CHICKEN DIP
Is it even the Super Bowl if there is no buffalo chicken dip? This recipe is a staple for this Sunday evening and it is so simple! You will need: 2 cups shredded rotisserie chicken, 8 oz cream cheese, softened, ½ cup ranch or blue cheese dressing, ½ cup buffalo sauce and 1 cup shredded cheddar cheese. After you have all of these ingredients, preheat your oven to 375°F. Mix all your ingredients into a bowl and after mixing thoroughly, transfer into a baking dish. This is not a necessary step but I add some extra shredded cheese on top to give it a crispy finish! Bake your dip for 20 minutes and serve with whatever veggie or chip you want.
2. LOADED NACHOS
If spice is not your thing, loaded nachos are always a fan favorite! You will need 1 bag tortilla chips, 1 cup shredded cheese (cheddar or Mexican blend), ½ cup cooked ground beef or shredded chicken (this is optional if you do not eat meat), ¼ cup sliced jalapeños (also optional), ½ cup black beans, ¼ cup diced tomatoes, sour cream, guacamole, and salsa for topping. This you can make however you want, you can add or take out any of these ingredients. Preheat your oven to 400°F. From here all you have to do is put your chips and toppings of choice on a baking sheet and keep checking until the cheese is melted to your liking!
3. GAME DAY RICE KRISPIE TREATS
To end off the game, after the halftime show it is sweet treat time! You can get really creative with these. You will need 6 cups Rice Krispies cereal (or Cocoa Krispies), 1 (10 oz) bag mini marshmallows, 4 tbsp unsalted butter, 1 tsp vanilla extract (optional) Food coloring (optional, to match team colors), melted chocolate or icing for decorating. Now In a large pot, melt butter over low heat. Add mini marshmallows and stir continuously until melted and smooth. If using food coloring, add it now and mix well. Remove from heat and stir in Rice Krispies until fully coated. Press the mixture into the greased pan using a buttered spatula or wax paper. Let cool for about 30 minutes. Now you can decorate to your liking, or shape them however you want! My friends and I usually make them into little footballs.
